Chocolate Chip Pumpkin Cookies

I love making pumpkin cookies in the fall. The recipe didn't call for chocolate chips, I threw those in for fun. They are delicious!

2.5 cups flour

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

.5 tsp nutmeg

.5 tsp salt

1.5 cups sugar

1 stick butter (.5 cup)

1 cup pumpkin puree

1 large egg

1 tsp vanilla

Preheat oven to 350 F. Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in bowl and set aside. Beat sugar and butter until smooth. Beat in pumpkin, egg and vanilla until smooth. Gradually add in flour and beat. Fold in chocolate chips. Drop by rounded tablespoon onto baking sheets. Bake for 15 to 18 minutes until edges are firmed.

If you don't want to add the chocolate chips you could drizzle with a glaze instead. Glaze recipe would be 2 cups sifted powdered sugar, 3 tblsp milk, 1 tblsp melted butter and 1 tsp vanilla extract. Mix until smooth.

P.S. - not my picture. I found it on the web. My camera is arriving today as Tarzan picks his parents up from the airport after 6 weeks in Italy. They borrowed my camera and I'm dying to get it back!

  4. Yeah so I posted that I was looking for something egg-free and this does have egg in it.

Still though, it's got pumpkin. And I'll bet you I can make it without egg and it'll still be good. Stay tuned! :)
